Sam continues to redefine expectations of Italian grape varieties grown on Australian soil. His La Prova label has produced some of the country's most compelling interpretations of Nebbiolo, Pinot Grigio, Aglianico, and Prosecco - alongside his most celebrated variety, Sangiovese. La Prova's Sangiovese remains one of the most convincing and expressive examples of the variety produced in Australia.
La Prova's range is built around two distinct labels: the White Label Series, focused on varietal purity and exceptional value, and the Uno Series, featuring single-site wines made in close collaboration with growers Sam works with year-round.
The winemaking philosophy is intentionally low-impact, with native yeasts, minimal sulphur at bottling, old oak maturation, and extended maceration for the red wines - sometimes exceeding nine months on skins. This approach allows Sam to craft wines with savoury complexity, structure, and an ethereal quality, all in pursuit of the purest possible expression of these varieties in Australia.

Policy for all events are outlined below:
Event Changes: If unforeseen circumstances require us to change or cancel an event, Mercato will happily reimburse the full cost of your ticket.
Cancellations: 7 days or more from event: Mercato will provide store credit equivalent to the full cost of your ticket for cancellations that occur from the time you purchase your ticket up to 7 days before the event.
Within 7 days of event: Event bookings cancelled within 7 days of the event date are strictly non-refundable.
