Our kitchen begins in the Marketplace

Fresh caught seafood, vegetables in season, olive oil and grains all shape what we cook – the same ingredients found in Sicily’s Blue Zone, where food is shared and life is lived well (and long).

PASTA

Our elicoidali, paccheri and orecchiette are made fresh in house, using flour by Molino Carrieri – Australia’s first sustainably grown, ancient grain, chemical-free, ‘Zero’ Italian style flour. Our pasta is available as small packs and family sized trays. Find them behind the Grab & Go with a selection of Mercato made sauces/passata.

Our spaghetti and linguine are DOP-certified and are made by Carmiano, a pasta company from Gragnano – a small town nestled between the Lattari Mountains and the Amalfi Coast near Naples. Find them in our extensive, (and we mean extensive) pasta selection near the back of the store.

SALUMI

Salumi is a staple in Italian cuisine, and a core part of our Marketplace. You can find the meats highlighted in our menu and so much more at the deli counter at the back of our store.

Our Parma prosciutto is from Vallani and is hand-salted and cured for 16 months. Renowned as one of the finest producers of Prosciutto di Parma, Villani have been making premium, traditionally crafted prosciutto in the heart of Castelnuovo in Emilia-Romagna since 1886.

Bacon and pork sausage are from Nino’s Smallgoods, who have been making handcrafted artisanal smallgoods locally in Adelaide since the 1960s.

Nduja is from Salumi Australia, an artisan salumi company founded by native Sardinian Massimiliano Scalas and his wife in the Byron Bay hinterland.

Mortadella in our breakfast panino is from Borgo. Well-known for their Northern Italian style salumi, Borgo were the first Italian smallgoods company in Queensland, established 1966.

Mortadella on our Aperitivo menu is from small batch premium smallgoods maker, Mr Cannubi, made from free range pigs from the Western Plains in Mount Mercer, Victoria.

Seafood

Our Market Fish and Crudo are sourced based on what’s in season and fresh that day from the market. Always expertly butchered and prepared in-house by our Seafood Butcher, James.

Visit our seafood counter to view our full range. If you're after something specific, speak to James or his knowledgeable staff and we may be able to order it for you depening on season and availability.

Oysters are from Coffin Bay near Port Lincoln (in the off-season, from Smoky Bay) and are freshly shucked in-house to order.

Vongole are from Coffin Bay near Port Lincoln.

To make our tuna sauce served with the veal we use Australian sustainable line-caught wild tuna from East Coast Tuna.

Cheese

Cheese is a huge part of Italian culture, and each region has their own identity and range. Our cheese bar has over 50 varieties including the cheeses included in our menu. Perfect for your next aperitivo, charcuterie board, or midnight snack run to the fridge. Find it next to the meat deli in the back right corner of the store. You might even find Mario cutting the huge wheels of pecorino or parmesan.

All of our fresh cheese on the menu is from Floridia Cheese, a Melbourne cheese company with roots in Sicily who have been making Italian-style cheese for over 70 years. Their buffalo mozzarella is made from 100% Australian Buffalo milk.

Yoghurt served in our granola is from Fleurieu Milk Company.

Produce

Our sourdough and Altumura bread is made fresh in-house every day. Pick up a loaf from the Grab & Go on your way out.

Our vegetables and fruit are always seasonal, fresh and local, sourced from Produce 4 Chefs. Available near the cheese counter.

Eggs are from Hood’s Earth Eggs, a family business on the Limestone Coast who produce delicious free-range, all-natural eggs without hormones or antibiotics from happy, healthy chickens who roam freely on their land. Available by the dozen next to the deli counter.

Olives & Preserved Vegetables

Sicilian olives are the famous Castelvetrano varietal from the Valle del Belice region of Sicily, produced by Azienda Agricola Pisciotta under the name Cusa for three generations. These olives are famous for their buttery taste, crisp bite and plump texture.

Find our range of giardiniera, olives, and pickled vegetables in our marketplace towards the back of the store.

All preserved vegetables on our menu are made in-house by Head Chef Nick Bergin and his team.

Dressings & Oil

Olive oil & balsamic vinegar are often called Italian elixirs. They bring harmony, and flavour to everything they touch while bringing countless health benefits.

Our fresh salads are finished with local extra virgin olive oil by Diana Olive Oil from the Fleurieu Peninsula, as well as Acetaia Giusti white balsamic from Modena, Emilia-Romagna who have been making premium balsamic vinegar for over 400 years.

Find our extensive range of Acetaia Giusti vinegars and olive oil in our marketplace. You can even fill your own bottle of Diana Olive Oil from our terracotta jars.


Aperitivo

Cocktails and crisps - a match made in heaven!

Find everything you need to make your own bubbly cocktails in our wine area, and head to our Marketplace to fill your basket with snacks, olives, and prosciutto.

I Bibanesi are small snack-sized grissini, delicately hand-stretched and shaped by the Da Re family in Treviso, Veneto.

Our chips are made by Amica Chips from Lombardy. These iconic classic crisps are thick-cut and golden, double fried with extra potato skin to give that nice crunch.
