San Simone (often called "Sansi") is a highly regarded, cult-favorite Italian bitter liqueur, first created in 1960 by Dr. Aldo Fechino from a 16th-century monks' recipe. Known for its complex blend of 34 herbs and citrus (including gentian, wormwood, and rhubarb), it offers notes of dark chocolate and caramel.
