Sourced from a 3.5-hectare, single-vineyard cru planted in 1960 at 390 meters above sea level, San Francesco is 100% Nebbiolo grown on a mosaic of igneous and metamorphic soils-granite, quartz, iron, and mineral sands left by ancient glaciers. Fermentation is spontaneous, with an 18-day maceration in concrete vats and no temperature control. The wine then matures for 18 months in mostly used French oak tonneaux, followed by another 18 months in large Slavonian oak casks (25-35HL), and completes its élevage with a further 12 months of bottle refinement.
