Producer Info: The Acquerello estate began as a hostel for travelers, until the rice cultivation began around 1400. As the farmstead-world started to grow, the estate changed adding dorm rooms, a tavern, workshops and all that was necessary for daily life in the country. In 1920 they build rice-farmer dormitories and expand the estate, as well as opening the Museum of rice culture. In 1935 Cesare Rondolino becomes the third owner, and in 1971 his son Piero starts to work as a rice grower with him.

In 1991 Piero decides to grow only a rice variety, Carnaroli, known as the rice king of risottos. Acquerello is born.
