Meet the producer

Giusto Occhipinti and Giambattista “Titta” Cilia

Founded in 1980 by three young friends, Giambattista Cilia, Cirino Strano and Giusto Occhipinti, COS began with just a few hectares of old bush-trained vines in Bastonaca, Vittoria. From their first harvest of just 1,470 bottles, the three friends set out to rediscover the potential of their corner of southeastern Sicily, guided more by curiosity and passion than by convention. Their work would go on to play an important role in the revival of Cerasuolo di Vittoria, bringing renewed attention to the region and its native varieties.

COS has always followed its own path, looking to ancient traditions rather than passing trends. The estate farms according to biodynamic principles, with a deep respect for the balance of the land, and has embraced terracotta amphora as a defining part of its winemaking. Since 2007, the winery has worked exclusively with amphora, allowing native grapes and the distinctive character of Vittoria to speak with remarkable clarity. Today, COS remains driven by the same spirit that inspired its founders: curiosity, patience and a genuine love of the land and its wines.
