Trentino Alto Adige
Trentino Alto Adige is an area that is characterised by division and symbiosis. In the northern mountainous terrain of the Dolomites live people of Tyrol origins and with that comes a definite Austrian influence in cuisine. Hearty soups, picked and fermented vegetables and meats (often smoked) are common alongside the region’s famous speck. Travelling south offers a culture more heavily influenced by neighbouring Veneto where the tie to agriculture and land dictate the palate. Berries and apples grown in the area are commonly presented wrapped in pasty.
