Honey Truffle Ice Cream
Truffle honey (literally honey with slivers of white truffle) is a speciality of Tuscany, which you can find in delicatessens. 
Ingredients | Makes about 1kg

535g whole (full-fat) milk

85g whipped cream

50g milk powder

20g caster sugar

120g egg yolks

105g runny honey

40g truffle honey 

Shop Ingredients 



Hand-blend the milk, cream and milk powder  until smooth. Put into a pan and bring to 40 degrees Celsius. Whisk in the sugar and egg yolks, then add the honeys. 

Bring up to 85 degrees Celsius, take off the heat, then cool as quickly as you can, so that you don't encourage bacteria. Put into the fridge for 6-12 hours. 

Put into an ice cream maker and churn according to instructions.
